- Ingredients:

- 1 cup natural
yogurt
5 ounces plain white flour
4 ounces sugar
3 eggs
3 tbsp extra-virgin olive oil
One lemon
Two teaspoons powered yeast
Six apples
Directions:

- In a large bowl mix together the yogurt,
flour, sugar, eggs, olive oil, grated lemon rind, yeast and four of
the apples, peeled and chopped finely.

- Grease and flour a cake
tin and put the remaining sliced apples in the bottom:
Sprinkle with lemon juice and sugar.

- Pour the mixture on top and put in the oven
to cook at 350° F (180° C) for thirty minutes.

- Sprinkle the surface
with icing sugar before serving if liked.

- This flan is
delicious just slightly warm but it can also be eaten hot with
vanilla ice cream.
